Watermelon Strawberry Citrus Sangria

Ingredients:
4 cups watermelon juice, from one small watermelon
1 pound fresh strawberries, hulled and sliced
1 bottle Rose wine, not too sweet is best
1 cup vodka
1 cup limoncello or Contreau
juice of 2 oranges
juice of 1 lime
1 orange sliced
1 lime sliced
Directions:
Slice a watermelon into large chunks.  Reserve a few smaller chunks for the sangria jar and for garnish.  Blend watermelon chunks with a handful of sliced strawberries until smooth.  Depending on the size of your blender, you may need to blend the fruit in two batches.  Strain fruit juice through a fine mesh strainer and into a large measuring cup.  You’ll need about 4 cups of watermelon/strawberry juice.
In a large container stir together, watermelon/strawberry juice, wine, vodka, limoncello, orange juice, and lime juice.  Stir in the remaining sliced strawberries, a few watermelon chunks, sliced oranges, and sliced lime.  Chill thoroughly before serving.  Serve over ice.

Cucumber Lime Mojito
Don’t let summer end without a little celebration! This cocktail combines refreshing lime with cucumbers for a special twist on a classic summer drink. Toast to the final day of a fun season full of delicious memories!
Makes: 1 cocktail
Preparation time: 10 minutes
1 Persian cucumber½ fresh lime*2 sprigs of fresh mint2 teaspoons sugar1 ½ ounces white rumCrushed iceClub sodaSlice of cucumber and lime for garnish*
Juice the cucumber by processing it in a centrifugal juicer. If you don’t have a juicer, you can puree the cucumber with 2 tablespoons of water in a blender and then strain the puree through a fine mesh sieve.
Add the cucumber juice, half a lime, 1 sprig of mint and sugar to a cocktail shaker. Mull the lime and mint with the sugar and cucumber juice to extract the lime juice and oils.
Add the rum and a handful of crushed ice. Shake until the liquid is well chilled.
Place the second sprig of mint in a cocktail glass and fill it with crushed ice. Strain the cocktail into the glass and top off with club soda. Garnish with a lime and cucumber slice before serving.
*We recommend using lemons and limes from Paramount Citrus. They are consistently fresh and juicy and available at most major grocery, mass and club retailers.
